Activity 2 Lollipops (the teacher will do this for you)
Ingredients: 1 cup white sugar, 2 tsp glucose syrup, 1/4 cup water, 1-2 drops flavour essence, 1-2 drops food colour
a) Line a baking tray with baking paper and set aside in the refrigerator. In a small saucepan, heat the sugar, glucose syrup and water.
b) Swirl pan to mix and bring to the boil.
c) Turn down to low and simmer for 10 minutes.
d) Drop a spoonful of the mixture into a glass of cold water and let it cool for 30 seconds. If you can crack it with your teeth, then it is ready.
e) Swirl the flavour and colour into the pan and drop spoonfuls onto the baking paper.
f) Push lollipop sticks into the drops before they completely harden.

Activity 3 Chocolate fudge recipe
Ingredients 1 tin sweetened condensed milk, 50 g unsalted butter, cubed, 350 g milk chocolate, roughly chopped
a) Line a slice pan with baking paper and set aside.
b) In a microwave safe bowl, place the butter and condensed milk and heat on high for 2 minutes.
c) Remove from microwave oven and add the milk chocolate. Stir constantly until chocolate is melted.
d) Pour mixture into the slice pan. Refrigerate until set which is approximately 2-4 hours. Slice into bite size pieces.

2) Explain what is happening when you put the solution into the microwave and then into the fridge.
